Why when I try to orbit around something I create in a user viewport it jumps away, disappearing from the screen, despite whatever coordinates I use (World, local.screen,etc.), and despite the Pivot is in the center of that object?

Try resetting the camera target.
Type in 'camera' and then i think it asks you for a start point. That one doesn't really matter - just hit enter for the default, or current value. Then when it asks you for the target, select a point near the center of whatever you are trying to orbit around. |

In Discreet forum I got this "Select the object in the viewport, then choose Arc Rotate Selected from the
navigation flyout at the bottom right of the UI. If you've got one big object, make a sub-object selection, then choose Arc Rotate Sub-object selection instead."
